This deeply fried fish is also used for wrapping in spring rolls. The skin with its large scales is removed and only the meat is used. The fish comes from the Mekong River Delta and may be a variant of the Gorami. The paper-like looking stuff is thin rice paper which is wet before being used for wrapping.
